Italian Soups Recipes - Thick Salami Soup (Zuppa Densa di Salame) Recipe

Ingredients

  • 15 g/1/2 oz/1 tbsp butter

  • 2 large potatoes, diced

  • 3 carrots, diced

  • 1 onion, chopped

  • 400 g/14 oz/1 large can chopped tomatoes

  • 10 ml/2 tsp chopped fresh herbs

  • 30 ml/2 tbsp tomato puree (paste)

  • 300 ml/1 1/4 cups chicken stock

  • Salt and freshly ground black pepper

  • 50 g/2 oz salami, skinned and diced

  • 400 g/14 oz/1 large can cannellini beans, drained


Method:

  1. Melt the butter in a saucepan and fry (sauté) the potatoes, carrots and onion for 5 minutes until soft.

  2. Stir in the tomatoes, 5 ml/1 tsp of the herbs, the tomato puree and stock.

  3. Bring to the boil, lower the heat and simmer for 30 minutes. Stir in the salami and the beans.

  4. Season to taste and heat for 5 minutes. Sprinkle the remaining herbs over and serve.
