Italian Vegetable Dishes Recipes - Asparagus Casserole (Sformato di Asparagi) Recipe

Ingredients

  • 4 hard-boiled (hard-cooked) eggs

  • 400 g/14 oz/1 large can asparagus spears

  • 100 g/4 oz fresh or frozen peas

  • Salt and freshly ground black pepper

  • 15 g/1 tbsp unsalted (sweet) butter

  • 295 g/1 large can condensed mushroom soup

  • 50g/1/2 cup dry breadcrumbs


Method:

  1. Slice the eggs. Drain the asparagus and put a layer in a casserole dish (Dutch oven).

  2. Add a layer of peas and a layer of sliced eggs. Sprinkle with salt and pepper. Dot with butter.

  3. Repeat until casserole is full. Spread over the mushroom soup and top with a layer of bread crumbs.

  4. Bake in a preheated oven at 200°C/400°F/gas mark 6 for 25-30 minutes until brown.
