Braised Celery and Tomato (Sedano e Pomodoro Brasati)

Ingredients

2 large celery
heads, trimmed
-
25 g/2 tbsp
unsalted (sweet) butter
-
1 onion, chopped
-
450 g/1lb tomatoes,
skinned, seeded and roughly chopped
-
Salt and freshly
ground black pepper
-
30 ml/2 tbsp chopped fresh
basil
-
8 olives, to
garnish (optional)
Method:
-
Bring a pan of salted water to the boil. Cut the celery into 9 cm/3
1/2 in
pieces and add to the boiling water.
-
Simmer for
3 minutes and drain. Melt the butter and fry (sauté)
the chopped onion for 3 minutes.
-
Add the celery
and tomatoes and season with the salt, pepper
and basil.
-
Cover the pan with a lid and simmer
for 10 minutes. Turn into a heated serving dish
and garnish with the olives, if using.
