Italian Vegetable Dishes Recipes - Braised Celery and Tomato (Sedano e Pomodoro Brasati) Recipe

Ingredients         

                  

  • 2 large celery heads, trimmed

  • 25 g/2 tbsp unsalted (sweet) butter

  • 1 onion, chopped

  • 450 g/1lb tomatoes, skinned, seeded and roughly chopped

  • Salt and freshly ground black pepper

  • 30 ml/2 tbsp chopped fresh basil

  • 8 olives, to garnish (optional)


Method:

  1. Bring a pan of salted water to the boil. Cut the celery into 9 cm/3 1/2 in pieces and add to the boiling water.

  2. Simmer for 3 minutes and drain. Melt the butter and fry (sauté) the chopped onion for 3 minutes.

  3. Add the celery and tomatoes and season with the salt, pepper and basil.

  4. Cover the pan with a lid and simmer for 10 minutes. Turn into a heated serving dish and garnish with the olives, if using.
