Braised Oven-cooked Potatoes (Patate Brasate al Forno)

Ingredients
900 g/2 lb potatoes,
scrubbed and thickly sliced
15 ml/1 tbsp
chopped fresh parsley
15 ml/1 tbsp chopped fresh
basil
10 ml/2 tsp chopped
fresh sage
15 ml/1 tbsp
chopped fresh oregano
4 ripe tomatoes, skinned,
seeded and roughly chopped
Salt and freshly
ground black pepper
60 ml/4 tbsp olive oil
2.5 ml/1/2 tsp caster (superfine) sugar
Coarse sea
salt
Method:

Put all the ingredients in a roasting tin (pan) except the sea salt and
toss gently but thoroughly until well blended.

Bake in a preheated oven at 230°C/450°F/gas mark
8 for about 1 hour until the potatoes are tender
and turning golden.
Sprinkle with a little
coarse sea salt and serve straight from the pan.
