Italian Vegetable Dishes Recipes - Braised Oven-cooked Potatoes (Patate Brasate al Forno) Recipe

Ingredients       

  • 2 large onions, roughly cut up

  • 900 g/2 lb potatoes, scrubbed and thickly sliced

  • 15 ml/1 tbsp chopped fresh parsley

  • 15 ml/1 tbsp chopped fresh basil

  • 10 ml/2 tsp chopped fresh sage

  • 15 ml/1 tbsp chopped fresh oregano

  • 4 ripe tomatoes, skinned, seeded and roughly chopped

  • Salt and freshly ground black pepper

  • 60 ml/4 tbsp olive oil

  • 2.5 ml/1/2 tsp caster (superfine) sugar
  • Coarse sea salt

Method:

  1. Put all the ingredients in a roasting tin (pan) except the sea salt and toss gently but thoroughly until well blended.

  2. Bake in a preheated oven at 230°C/450°F/gas mark 8 for about 1 hour until the potatoes are tender and turning golden.

    Sprinkle with a little coarse sea salt and serve straight from the pan.
