Italian Vegetable Dishes Recipes - Broccoli with Red Bean Sauce (Broccoli con Salsa di Azuchi Rossi) Recipe

Ingredients              

  • 225 g/8 oz broccoli florets

  • 30 ml/2 tbsp oil

  • 1 red (bell) pepper, chopped

  • 3 spring onions (scallions), chopped

  • 75 g/3 oz/3/4 cup cooked aduki beans or a 425 g/15 oz/large can, drained

  • 175 ml/6 fl oz/3/4 cup vegetable stock

  • 10 ml/2 tsp corn flour (cornstarch)


Method:

  1. Steam the broccoli for 8 minutes and transfer to a warmed serving dish.

  2. Heat the oil in a large pan and fry (sauté) the pepper and spring onions until soft.

  3. Add the red beans and stock and cook for 3 minutes, stirring. Blend the corn flour with 15 ml/1 tbsp of water and add to the pan.

  4. Cook for 1 minute. Pour the sauce over the broccoli and serve at once.
