Italian Vegetable Dishes Recipes - Buttered French Beans (Fagiolini al Burro) Recipe

Ingredients     

  • Salt

  • 450 g/1lb French (green) beans, trimmed

  • 15 g/1 tbsp butter

  • 1 onion, chopped

  • 1 garlic clove, chopped

  • 15 g/1 tbsp chopped fresh parsley

  • 15 ml/1 tbsp grated Parmesan cheese


Method:

  1. Bring a pan of salted water to the boil and add the French beans. Lower the heat and simmer gently for 6 minutes or until tender.

  2. Heat the butter in a frying pan (skillet) and cook the onion and garlic for 5 minutes until browned.

  3. Lower the heat, season to taste and stir in the parsley. Drain the beans and place in a hot dish.

  4. Pour over the melted butter and onions and sprinkle with the Parmesan cheese. Place under a hot grill (broiler) for 2 minutes.
