Italian Vegetable Dishes Recipes - Buttered Tomatoes (Pomodori al Burro) Recipe

Ingredients              

  • 4 beefsteak tomatoes

  • 50 g/2 oz/1/4 cup unsalted (sweet) butter

  • Salt and freshly ground black pepper

  • 10 ml/2 tsp chopped fresh basil


Method:

  1. Halve the tomatoes and place them in an ovenproof dish. Melt the butter and brush over the tomatoes.

  2. Season with the salt and freshly ground pepper. Grill (broil) for 2 minutes, brush again with butter, grill for a further 2 minutes.

  3. Sprinkle again with the pepper and garnish with the basil.
