Italian Vegetable Dishes Recipes - Cheese and Salami Courgettes (Zucchine con Formaggio e Salane)Recipe

Ingredients         

  • 2 large courgettes (zucchini), halved

  • 75 g/3 oz/1/3 cup hard cheese, grated

  • 2 hard-boiled (hard-cooked) eggs, chopped

  • 5 ml/1 tsp chopped fresh parsley

  • Salt and freshly ground black pepper

  • 50 g/2 oz salami, chopped


Method:

  1. Scoop out the centers of the courgettes, chop and place in a bowl. Arrange the shells in a shallow ovenproof dish.

  2. Mix half the cheese, eggs and parsley with the courgette flesh and season with the salt and pepper.

  3. Spoon into the courgette shells and top with the salami.

  4. Sprinkle over the remaining cheese and bake in a preheated oven at 190°C/375°F/gas mark 5 for 35 minutes until brown and cooked through.
