Italian Vegetable Dishes Recipes - Cheese and Tomato Pie (Pasticcio di Formaggio e Pomodori) Recipe

Ingredients                              

  • 3 eggs

  • 25g/1 oz/2 tbsp margarine

  • 75 g/3 oz/1 1/2 cups breadcrumbs

  • 150 ml/2/3 cup boiling milk

  • 400 g/14 oz/1 large can chopped tomatoes

  • 25 g/2 tbsp hard cheese, grated

  • 45 ml/3 tbsp chopped fresh parsley

  • Salt and freshly ground black pepper

  • 2 tomatoes, sliced


Method:

  1. Separate the eggs and set aside. Place the margarine and breadcrumbs in a bowl and pour over the boiling milk. Leave to soak for 30 minutes.

  2. Add the chopped tomatoes, cheese, parsley, egg yolks and seasoning and mix thoroughly.

  3. Whisk the egg whites until stiff and fold into the mixture. Pour into a greased soufflé dish.

  4. Garnish with the sliced tomatoes and bake in a preheated oven at 200°C/400°F/gas mark 6 for 25-30 minutes.

  5. Serve hot when set and the top is brown.
