Italian Vegetable Dishes Recipes - Cheesy Tomatoes (Pomodori con Formaggio) Recipe

Ingredients      

  • 8 large tomatoes

  • Salt and freshly ground black pepper

  • 225 g/8 oz hard cheese, grated

  • 25 g/1 oz Mozzarella cheese, chopped

  • 30 ml/2 tbsp chopped fresh basil

  • 45 ml/3 tbsp soured (dairy sour) cream


Method:

  1. Slice the lid from the top of each tomato and set aside. Scoop out the flesh and seeds and set aside for further use.

  2. Season the inside of the tomatoes with the salt and pepper. Stand the tomatoes in a large oven­proof dish.

  3. Mix the cheeses in a bowl with the basil. Stir in the soured cream and spoon the mixture back into the tomato shells.

  4. Replace the lids and bake in a preheated oven at 200°C/400°F/gas mark 6 for 15 minutes. Serve immediately.
