Ingredients

15 g/1 tbsp
unsalted (sweet) butter

900 g/2
lb carrots,
diced
-
2 celery sticks,
diced
-
2 potatoes, diced
-
1 onion, finely
chopped
-
1 bay leaf
-
30 ml/2 tbsp sherry
-
Large bunch of
fresh herbs
Method:
-
Place the butter in a saucepan and when hot fry
(sauté) the vegetables for 3 minutes.
-
Add the
remaining ingredients and continue cooking
until tender.
-
Remove the bunch of herbs and bay
leaf before serving.
