Italian Vegetable Dishes Recipes - Cooked Mixed Vegetables (Verdure Misto Cotte) Recipe

Ingredients                              

  • 15 g/1 tbsp unsalted (sweet) butter

  • 900 g/2 lb carrots, diced

  • 2 celery sticks, diced

  • 2 potatoes, diced

  • 1 onion, finely chopped

  • 1 bay leaf

  • 30 ml/2 tbsp sherry

  • Large bunch of fresh herbs


Method:

  1. Place the butter in a saucepan and when hot fry (sauté) the vegetables for 3 minutes.

  2. Add the remaining ingredients and continue cooking until tender.

  3. Remove the bunch of herbs and bay leaf before serving.
