Courgettes with Ginger (Zucchini con Zenzero e Mandorle)

Ingredients

15 ml/1 tbsp
vegetable oil
-
45 ml/3 tbsp
blanched almonds
-
1 small onion,
chopped
-
5 ml/1 tsp finely
chopped fresh root ginger
-
450 g/1lb
courgettes (zucchini), sliced thinly
-
30 ml/2 tbsp lemon
juice
-
15 ml/1 tbsp chopped fresh oregano
Method:

Heat the oil and add the almonds. Cook for 2
minutes until just turning brown. Drain and set
aside.

Add the onion and ginger to the pan and
cook for 4 minutes to soften the onions.

Add the courgettes with the lemon juice and cook for 5
minutes, stirring.

Return the almonds to the
pan and blend in the oregano. Cook for 2 minutes
and serve.
