Italian Vegetable Dishes Recipes - Courgettes with Ginger (Zucchini con Zenzero e Mandorle) Recipe

Ingredients                              

  • 15 ml/1 tbsp vegetable oil

  • 45 ml/3 tbsp blanched almonds

  • 1 small onion, chopped

  • 5 ml/1 tsp finely chopped fresh root ginger

  • 450 g/1lb courgettes (zucchini), sliced thinly

  • 30 ml/2 tbsp lemon juice

  • 15 ml/1 tbsp chopped fresh oregano


Method:

  1. Heat the oil and add the almonds. Cook for 2 minutes until just turning brown. Drain and set aside.

  2. Add the onion and ginger to the pan and cook for 4 minutes to soften the onions.

  3. Add the courgettes with the lemon juice and cook for 5 minutes, stirring.

  4. Return the almonds to the pan and blend in the oregano. Cook for 2 minutes and serve.
