Italian Vegetable Dishes Recipes - Courgettes with Spicy Mustard (Zucchini con Mostarda Piccante) Recipe

Ingredients                              

  • 450g/1lb courgettes (zucchini)

  • 30 ml/2 tbsp tomato puree (paste)

  • 15 ml/1 tbsp lemon juice

  • 30 ml/2 tbsp white wine vinegar

  • 2.5 ml/1/2 tsp cayenne

  • 10 ml/2 tsp made mustard

  • 5 ml/1 tsp chopped fresh sage

  • 30 ml/2 tbsp olive oil


Method:

  1. Trim and cut the courgettes into 5 cm/2 in pieces. In a small bowl blend the tomato puree with the lemon juice, white wine vinegar, cayenne, ready-made mustard and sage.

  2. Beat in the olive oil. Arrange the courgette pieces in a shallow ovenproof dish and brush over with the sauce.

  3. Cover with foil and place in a preheated oven for 15 minutes at 190°C/375°F/gas mark 5.
