Italian Vegetable Dishes Recipes - Fried Pumpkin (Zucca Fritta) Recipe

Ingredients                              

  • 550 g/ 1 1/4 lb pumpkin, peeled, seeded and sliced

  • Salt

  • 500 ml/17 fl oz/2 1/4 cups milk

  • 2 eggs, beaten

  • 100 g/4 oz/1/2 cup unsalted (sweet) butter

  • 30 ml/2 tbsp oil

  • 45 ml/3 tbsp plain (all-purpose) flour

  • 60 ml/4 tbsp stale breadcrumbs


Method:

  1. Place the pumpkin slices in a pan, sprinkle with salt, cover with milk and bring to the boil.

  2. Simmer for about 10 minutes until tender, then drain and leave to cool. Season the eggs with salt. Heat the butter and oil in a heavy-based pan.

  3. Quickly dip each slice of pumpkin into the flour, then into the egg, then into the breadcrumbs.

  4. Fry (sauté) until crisp and brown on both sides. Drain on kitchen paper and serve at once.
