Italian Vegetable Dishes Recipes - Gorgonzola Beans (Fagioli al Gorgonzola) Recipe

Ingredients     

  • 30 ml/2 tbsp olive oil

  • 1 onion, chopped

  • 2 garlic cloves, crushed

  • 425 g/15 oz/1 large can cannellini beans, drained

  • 425 g/15 oz/1 large can butter beans, drained

  • 4 large potatoes, sliced

  • 225 g/8 oz Gorgonzola cheese, crumbled

  • 90 ml/6 tbsp double (heavy) cream

  • Salt and freshly ground black pepper


Method:

  1. Heat half of the oil in a large pan and cook the onion and crushed garlic for 5 minutes.

  2. Stir in the beans and season to taste. Heat through and pour into an ovenproof dish.

  3. Meanwhile, boil the potatoes until just tender. Drain and arrange on top of the casserole.

  4. Blend the Gorgonzola with the cream, season and pour over the surface of the potatoes.

  5. Bake in a preheated oven at 200°C/400°F/ gas mark 6 for 25 minutes.
