Hearty Beans (Fagioli Sostanziosi)

Ingredients

30 ml/2 tbsp olive
oil
-
1 onion, chopped
-
2 garlic cloves,
crushed
-
400 g/14 oz/1 large
can chopped tomatoes
-
30 ml/2 tbsp tomato
puree (paste)
-
425 g/15 oz/1 large can cannellini beans
-
425 g/15 oz/1 large
can red kidney beans
-
425 g/15 oz/1 large
can butter beans
-
Salt and freshly ground black
pepper

4 large potatoes, sliced
Method:

Heat half the oil in a large pan and cook the onion and crushed garlic
for 5 minutes.

Stir in the tomatoes and tomato
puree. Drain the beans, add to the pan and
season to taste.

Bring to the boil and pour into
a casserole dish (Dutch oven).

Cook the potatoes
in a pan of boiling water for 5 minutes until
just tender. Drain and arrange on top of the
casserole.

Brush over with the remaining oil and
bake in a preheated oven at 200°C/400°F/gas
mark 6 for 25 minutes.
