Italian Vegetable Dishes Recipes - Hearty Beans (Fagioli Sostanziosi) Recipe

Ingredients         

  • 30 ml/2 tbsp olive oil

  • 1 onion, chopped

  • 2 garlic cloves, crushed

  • 400 g/14 oz/1 large can chopped tomatoes

  • 30 ml/2 tbsp tomato puree (paste)

  • 425 g/15 oz/1 large can cannellini beans

  • 425 g/15 oz/1 large can red kidney beans

  • 425 g/15 oz/1 large can butter beans

  • Salt and freshly ground black pepper

  • 4 large potatoes, sliced


Method:

  1. Heat half the oil in a large pan and cook the onion and crushed garlic for 5 minutes.

  2. Stir in the tomatoes and tomato puree. Drain the beans, add to the pan and season to taste.

  3. Bring to the boil and pour into a casserole dish (Dutch oven).

  4. Cook the potatoes in a pan of boiling water for 5 minutes until just tender. Drain and arrange on top of the casserole.

  5. Brush over with the remaining oil and bake in a preheated oven at 200°C/400°F/gas mark 6 for 25 minutes.
