Italian Vegetable Dishes Recipes - Herb Vegetables (Verdura con Gliodori) Recipe

Ingredients     

  • 900 g/2 lb carrots, diced

  • 2 celery sticks, diced

  • 2 potatoes, diced

  • 1 onion, finely chopped

  • 15 g/1 tbsp unsalted (sweet) butter

  • 1 bay leaf

  • 30 ml/2 tbsp dry sherry

  • Large bunch of mixed herbs

Method:

  1. Fry (sauté) the vegetables in the butter for 5 minutes, stirring.

  2. Add the remaining ingredients, cover and continue cooking until tender, stirring occasionally.

  3. Remove nil the herbs before serving.
