Italian Vegetable Dishes Recipes - Italian Vegetables (Verdure in Intingolo) Recipe

Ingredients     

  • 100 g/4 oz/1/2 cup unsalted (sweet) butter

  • 45 ml/3 tbsp vegetable oil

  • 4 onions, sliced

  • 3 large yellow and red (bell) peppers, cut into strips

  • 1 large courgette (zucchini), peeled and cut into thin rounds

  • 400 g/1 large can tomatoes, drained and coarsely chopped

  • 1 celery stick, chopped

  • 60 ml/4 tbsp white wine vinegar

  • Salt and freshly ground black pepper


Method:

  1. Heat the butter and oil and fry (sauté) the onions until soft but not brown.

  2. Add the peppers, courgette, tomatoes, celery and wine vinegar, stir well and season with salt and pepper.

  3. Bring to the boil, cover and simmer very gently for 40 minutes, stirring frequently and adding a little water if the mixture becomes too dry. Serve piping hot.
