Italian Vegetable Dishes Recipes - Oregano and Olive Potatoes (Patate con Origano e Olive) Recipe

Ingredients                              

  • 15 g/1 tbsp unsalted (sweet) butter

  • 15 ml/1 tbsp olive oil

  • 900 g/2 lb potatoes, thinly sliced

  • 1 large onion, sliced

  • 2 garlic cloves, crushed

  • Salt and freshly ground black pepper

  • 1 red (bell) pepper, diced

  • 1 green (bell) pepper, diced

  • 30 ml/2 tbsp black olives, halved and stoned (pitted)

  • 15 ml/1 tbsp chopped fresh oregano


Method:

  1. Melt the butter and oil in a large saucepan and add the potatoes, onions, garlic, salt and pepper.

  2. Cook, stirring frequently, for 15 minutes until the potatoes are brown on the edges.

  3. Add the red and green peppers and continue cooking for 8-10 minutes. Stir in the olives and cook for a further 5 minutes.

  4. Remove from the heat, sprinkle over the chopped oregano and serve.
