Oregano and Olive Potatoes (Patate con Origano e Olive)

Ingredients

15 g/1 tbsp
unsalted (sweet) butter
-
15 ml/1 tbsp olive
oil
-
900 g/2
lb
potatoes, thinly sliced
-
1 large onion,
sliced
-
2 garlic cloves,
crushed
-
Salt and freshly
ground black pepper
-
1 red (bell) pepper, diced
-
1 green (bell)
pepper, diced
-
30 ml/2 tbsp black
olives, halved and stoned (pitted)
-
15 ml/1 tbsp
chopped fresh oregano
Method:
-
Melt the butter
and oil in a large saucepan and add the
potatoes, onions, garlic, salt and pepper.

Cook,
stirring frequently, for 15 minutes until the
potatoes are brown on the edges.
-
Add the red and
green peppers and continue cooking for 8-10
minutes. Stir in the olives and cook for a
further
5 minutes.
-
Remove from the heat, sprinkle over the chopped
oregano and serve.
