Parmesan Potatoes (Patate al Parmigiano)

Ingredients

4 potatoes, sliced
thinly

Salt
-
100 g/4 oz/1/2 cup
Ricotta cheese
-
15 ml/1 tbsp chopped
fresh parsley
-
2.5 ml/1/2 tsp grated nutmeg
-
45 ml/3 tbsp
Parmesan cheese, grated

1 egg yolk, beaten
Method:
-
Put the sliced potatoes in a pan of salted water
and boil for 6 minutes. Drain and leave to cool.

Place the Ricotta cheese, parsley, nutmeg and
Parmesan cheese in a bowl with the beaten egg
yolk.

Blend to a stiff paste. Arrange the
potatoes in an ovenproof dish.

Spread with the
cheese and egg mixture and cook in a preheated
oven at 190°C/375°F/gas mark 5 for 25 minutes.
