Italian Vegetable Dishes Recipes - Parmesan Potatoes (Patate al Parmigiano) Recipe

Ingredients                              

  • 4 potatoes, sliced thinly

  • Salt

  • 100 g/4 oz/1/2 cup Ricotta cheese

  • 15 ml/1 tbsp chopped fresh parsley

  • 2.5 ml/1/2 tsp grated nutmeg

  • 45 ml/3 tbsp Parmesan cheese, grated

  • 1 egg yolk, beaten


Method:

  1. Put the sliced potatoes in a pan of salted water and boil for 6 minutes. Drain and leave to cool.

  2. Place the Ricotta cheese, parsley, nutmeg and Parmesan cheese in a bowl with the beaten egg yolk.

  3. Blend to a stiff paste. Arrange the potatoes in an ovenproof dish.

  4. Spread with the cheese and egg mixture and cook in a preheated oven at 190°C/375°F/gas mark 5 for 25 minutes.
