Pizza Potatoes (Pizza di Patate)

Ingredients
2 large
potatoes, scrubbed
400 g/14 oz/1 large can chopped tomatoes
1 small green
(bell) pepper, thinly sliced
100 g/4 oz
Mozzarella cheese, cut in slices
Method:

Cut the potatoes in half and then into
quarters, then eighths.

Cook the wedges in
boiling, salted water for 8 minutes or until
tender.

Arrange the wedges in an ovenproof
dish. Pour over the tomatoes and add the green
pepper slices.

Top with the Mozzarella slices
and place under a hot grill (broiler) for 5
minutes until the cheese has melted.
