Italian Vegetable Dishes Recipes - Potato Cakes (Tortini di Patate) Recipe

Ingredients                            

  • 4 large baking potatoes

  • 75 ml/3 tbsp olive oil

  • Salt and freshly ground black pepper

  • 15 ml/1 tbsp chopped fresh basil


Method:

  1. Thinly slice the potatoes and brush each slice with olive oil.

  2. Arrange the potato slices on a baking sheet, slightly overlapping each slice. Sprinkle with the salt and pepper.

  3. Bake in a preheated oven at 180°C/350°F/gas mark 4 for 10 minutes until the edges are golden brown.

  4. Serve hot. Sprinkle over the chopped basil before serving.

  5. The potato cakes can be made in advance so are good for dinner parties when they can be reheated for 2-3 minutes.
