Italian Vegetable Dishes Recipes - Potato Gnocchi with Microwave (Gnocchi di Patate con Salsa alla Microonda) Recipe

Ingredients  

  • 3 large potatoes, cut in chunks

  • salt and freshly ground black pepper

  • 1 egg, beaten

  • 15g/1 tbsp unsalted (sweet) butter

  • 75g/3/4 cup Parmesan cheese, grated

Sauce:

  • 400 g/14 oz/1 large can chopped tomatoes

  • 10 ml/2 tsp brown sugar

  • 2 garlic cloves, chopped

  • 15 ml/1 tbsp tomato puree (paste)

  • 15 ml/1 tbsp chopped fresh oregano

  • 5 ml/1 tsp paprika


Method:

  1. Boil the potatoes in salted water for 12 minutes until just tender. Pass through a sieve (strainer) and blend with the flour, egg and butter.

  2. Form into balls and cook in boiling salted water for 10 minutes. Drain and sprinkle with the Parmesan cheese.

  3. Meanwhile, mix all the sauce ingredients in a bowl, cover and microwave on full for 8 minutes.

  4. Stir well and leave to stand for 5 minutes. Serve with the gnocchi.
