Italian Vegetable Dishes Recipes - Potato and Leeks in White Sauce (Patate e Porri in Besciamella) Recipe

Ingredients         

  • 2 leeks, halved and sliced

  • 50 g/2 oz/1/4 cup unsalted (sweet) butter

  • 900 g/2 lb potatoes, thinly sliced

  • 25 g/1 oz/1/4 cup plain (all-purpose) flour

  • 600 ml/2 1/2 cups milk

  • 2.5 ml/1/2 tsp grated nutmeg

  • Salt and freshly ground black pepper

  • Bouquet garni sachet


Method:

  1. Melt the butter in a large saucepan. Add the leeks and potatoes and cook for approximately 10 minutes until they are soft.

  2. Sprinkle the flour over the vegetables and cook for 1 minute, stirring all the time.

  3. Pour in the milk and bring to the boil, stirring. Season to taste with the nutmeg, salt and pepper and bouquet garni.

  4. Cover the pan, reduce the heat and simmer very gently for a further 15 minutes, stirring occasionally.

  5. Remove the bouquet garni before serving.
