Italian Vegetable Dishes Recipes - Potatoes with Olives (Patate con Olive) Recipe

Ingredients     

  • 15 ml/1 tbsp olive oil

  • 15 g/1/2 oz/1 tbsp unsalted (sweet) butter

  • 2 garlic cloves, crushed

  • 900 g/2 lb potatoes, roughly chopped

  • 5 ml/1 tsp salt

  • 2.5 ml/1/2 tsp freshly ground black pepper

  • 120 ml/1/2 cup vegetable stock
  • 15 ml/1 tbsp chopped fresh oregano
  • 12 stoned (pitted) olives, halved

Method:

  1. Heat the oil and butter in a large saucepan and fry (sauté) the crushed garlic.

  2. Add the potatoes to the pan with the salt, pepper, stock and oregano. Blend well, bring to the boil and reduce the heat.

  3. Simmer for 30 minutes until the sauce is thick. Cool for 5 minutes.

  4. Pour into a blender and blend until smooth. Stir in the olives before serving.
