Italian Vegetable Dishes Recipes - Radicchio, Cheese and Eggs (Radicchio, Cacio e Uova) Recipe

Ingredients                              

  • 4 radicchio heads, each halved

  • 1 large onion, chopped

  • 45 ml/3 tbsp olive oil

  • 2 large celery sticks, chopped

  • 3 carrots, finely chopped

  • Salt and freshly ground black pepper

  • 2 eggs, beaten

  • 50 g/2 oz/1/2 cup Parmesan cheese, grated

  • 30 ml/2 tbsp chopped fresh basil


Method:

  1. Place the radicchio in a large pan of boiling, salted water and cook for 8-10 minutes.

  2. Fry (sauté) the chopped onion in the oil with the celery and carrots. Cook, stirring, for 5 minutes.

  3. Drain the radicchio and squeeze out the excess water. Roughly chop and add to the carrots and celery. Cook for 3 minutes.

  4. Beat the eggs, cheese and basil together, season with salt and pepper and pour over the vegetables.

  5. Mix together and cook gently until scrambled. Serve hot.
