Radicchio, Cheese and Eggs (Radicchio, Cacio e Uova)

Ingredients

4 radicchio heads,
each halved
-
1 large onion,
chopped
-
45 ml/3 tbsp olive
oil
-
2 large celery
sticks, chopped
-
3 carrots, finely
chopped
-
Salt and freshly
ground black pepper
-
2 eggs, beaten
-
50 g/2 oz/1/2 cup
Parmesan cheese, grated

30 ml/2 tbsp chopped
fresh basil
Method:
-
Place the radicchio in a large pan of boiling,
salted water and cook for 8-10 minutes.

Fry (sauté)
the chopped onion in the oil with the celery and
carrots. Cook, stirring, for 5 minutes.

Drain
the radicchio and squeeze out the excess water.
Roughly chop and add to the carrots and celery.
Cook for 3 minutes.

Beat the eggs, cheese and
basil together, season with salt and pepper and
pour over the vegetables.

Mix together and cook
gently until scrambled. Serve hot.
