Red Cabbage (Cavolo Rosso)

Ingredients

30 ml/2 tbsp olive
oil
-
1 large onion,
thinly sliced
-
75 g/3 oz
prosciutto
-
1 kg/2 1/4 lb red
cabbage, shredded
-
60 ml/4 tbsp red wine
-
2.5 ml/1/2 tsp grated
nutmeg
-
Salt and freshly
ground black pepper
Method:
-
Heat the olive oil
in a large saucepan and fry (sauté) the onion
for 1 minute.
-
Stir in the prosciutto and cook
for 2 minutes. Add the red cabbage and cook,
stirring frequently, for 3 minutes.
-
Pour in the
red wine and add the nutmeg, salt and pepper.
Cover with a lid and cook slowly for 30 minutes.
