Italian Vegetable Dishes Recipes - Red Cabbage (Cavolo Rosso) Recipe

Ingredients     

  • 30 ml/2 tbsp olive oil

  • 1 large onion, thinly sliced

  • 75 g/3 oz prosciutto

  • 1 kg/2 1/4 lb red cabbage, shredded

  • 60 ml/4 tbsp red wine

  • 2.5 ml/1/2 tsp grated nutmeg

  • Salt and freshly ground black pepper


Method:

  1. Heat the olive oil in a large saucepan and fry (sauté) the onion for 1 minute.

  2. Stir in the prosciutto and cook for 2 minutes. Add the red cabbage and cook, stirring frequently, for 3 minutes.

  3. Pour in the red wine and add the nutmeg, salt and pepper. Cover with a lid and cook slowly for 30 minutes.
