Italian Vegetable Dishes Recipes - Roasted Fennel (Finocchio Roti) Recipe

Ingredients     

  • 4 fennel bulbs

  • 30ml/2 tbsp olive oil

  • 30 ml/2 tbsp lemon juice

  • 1 garlic clove, crushed

  • Salt and freshly ground black pepper

  • 15 ml/1 tbsp chopped fresh parsley


Method:

  1. Trim the fennel, saving the fronds for garnish. Cut each bulb in half lengthwise and place in an ovenproof dish.

  2. Mix together the oil, lemon juice and garlic and brush over the fennel.

  3. Season with the salt and pepper and bake, uncovered, in a preheated oven at 200°C/400°F/gas mark 6 for 35 minutes.

  4. Sprinkle with the parsley before serving.
