Roasted Fennel (Finocchio Roti)

Ingredients
Method:

Trim the fennel,
saving the fronds for garnish. Cut each bulb in
half lengthwise and place in an ovenproof dish.
-
Mix together the oil, lemon juice and garlic and
brush over the fennel.
-
Season with the salt and
pepper and bake, uncovered, in a preheated oven
at 200°C/400°F/gas mark 6 for 35 minutes.
-
Sprinkle with the parsley before serving.
