Italian Vegetable Dishes Recipes - Spiced Carrots (Carote Piccante) Recipe

Ingredients     

  • 4 carrots, grated

  • 1 onion, chopped

  • Salt

  • 15 g/1/2 oz/1 tbsp unsalted (sweet) butter

  • 25 g/1 oz/1/4 cup plain (all-purpose) flour

  • 10 ml/2 tsp sugar

  • 1.5 ml/1/4 tsp cayenne

  • 15 ml/1 tbsp wine or tarragon vinegar

  • 15 ml/1 tbsp chopped fresh parsley


Method:

  1. Cook the carrots and onion in boiling, salted water for 5 minutes.

  2. Drain, turn into a warm dish, keep warm and reserve the liquid.

  3. Heat the butter in a saucepan, blend in the flour and cook for 1 minute.

  4. Gradually add enough of the carrot liquid to make a smooth sauce, stirring all the time.

  5. Stir in the sugar, cayenne and vinegar. Pour over the carrots and onion and garnish with the chopped parsley.
