Italian Vegetable Dishes Recipes - Spinach Flan (Pasticcio con Spinaci) Recipe

Ingredients         

  • 225 g/8 oz shortcrust pastry (basic pie crust)

  • 350 g/12 oz spinach

  • 3 eggs

  • 250 ml/1 cup milk

  • Salt and freshly ground black pepper

  • 1.5 ml/1/4 tsp cayenne


Method:

  1. Roll out the pastry and line a 23 cm/9 in Han tin (pie pan).

  2. Line with greaseproof (waxed) paper and baking beans and bake in a preheated oven at 190°C/375°F/gas mark 5 for 10 minutes.

  3. Remove the paper and baking beans. Place the spinach in a saucepan with 15 ml/1 tbsp water and cover with a lid. Cook for 8 minutes, drain and allow to cool.

  4. Beat the eggs into the spinach. Stir in the milk and season with the salt, pepper and cayenne.

  5. Pour into the pastry case and bake in a preheated oven at 180°C/350°F/gas mark 4 for 40 minutes.
