Italian Vegetable Dishes Recipes - Spinach Ring (Corona di Spinaci) Recipe

Ingredients     

  • 275 g/10 oz spinach

  • 250 ml/1 cup milk

  • 5 eggs, lightly beaten

  • 1.5 ml/1/4 tsp grated nutmeg

  • 1.5 ml/1/4 tsp salt

  • 1.5 ml/1/4 tsp freshly ground black pepper

  • 5 ml/1 tsp butter for greasing

  • Carrots and peas, to serve


Method:

  1. Wash the spinach well, drain and chop. Heat the milk until almost boiling and pour slowly over the beaten eggs.

  2. Stir in the nutmeg, salt and pepper. Stir in the spinach. Pour into a greased ring mould (mold) in a pan of hot water.

  3. Bake in a preheated oven at 180°C/350°F/gas mark 4 for 30 minutes, or until firm.

  4. Loosen around the edges and turn out. Fill the centre with freshly cooked carrots and peas.
