Italian Vegetable Dishes Recipes - Sweet-and-sour Courgettes (Zucchini in Agrodolce) Recipe

Ingredients                                                

  • 900 g/2 lb courgettes (zucchini), sliced

  • Salt and freshly ground black pepper

  • 75 ml/5 tbsp olive oil

  • 1.5 ml/1/4 tsp ground cinnamon

  • 60 ml/4 tbsp white wine vinegar

  • 30 ml/2 tbsp sugar


Method:

  1. Place the courgettes in a colander, sprinkle with salt and leave for 30 minutes. Rinse, then pat dry with kitchen paper.

  2. Heat the nil in a large pan and cook the courgettes over a low heat until almost tender.

  3. Add the cinnamon, wine vinegar and sugar and season generously with pepper.

  4. Continue 10 cook, stirring frequently, until most of the sauce has evaporated.

  5. Season to taste with salt and pepper before serving.
