Tomato Stew (Pomodori in Umido)

Ingredients

25 g/1 oz/2 tbsp
unsalted (sweet) butter
-
30 ml/2 tbsp olive
oil
-
1 large onion,
thinly sliced
-
2 garlic cloves,
crushed
-
3 red (bell)
peppers, sliced thinly
-
3 tomatoes,
skinned, seeded and roughly chopped
-
5 ml/1 tsp chopped
fresh basil
-
Salt and freshly
ground black pepper

2.5 ml/1/2 tsp cayenne
-
1 bay leaf
Method:
-
Heat the butter
and oil in a saucepan and fry (sauté) the onion
and garlic for 5 minutes.

Add the red peppers
and tomatoes, cover the pan with foil or a lid
and reduce the heat.
-
Simmer gently for 12
minutes and stir in the remaining ingredients.
Simmer, uncovered, for a further 20 minutes.
