Italian Vegetable Dishes Recipes - Trentino Turnips (Rape alla Trentina) Recipe

Ingredients              

  • 1 kg/2 1/3 lb small turnips, peeled but left whole

  • Salt and freshly ground black pepper

  • 60 ml/4 tbsp olive oil

  • 10 ml/2 tsp sugar


Method:

  1. Place the turnips in a pan and just cover with water. Add a little salt, bring to the boil and simmer gently for about 10 minutes or until tender.

  2. Drain and leave to cool, then slice the turnips into thin strips.

  3. Heat the oil in a separate pan, then add the sugar and cook gently until it begins to color slightly. Do not allow it to burn or become too dark.

  4. Add the turnips, stir well to coat with the sugar and season with pepper. Cook gently for a further 10 minutes then serve at once.
